Canadian Bacon, Swiss and Eggs
A low carb recipe
Yield: 4 servings
Directions:
In a medium mixing bowl, whisk together eggs, milk, salt and pepper until well blended. Set aside 2 tablespoons onions. Stir remaining onions into egg mixture.
Coat a 12- inch skillet with nonstick spray and place over medium low heat. Add egg mixture when skillet is hot. Cover tightly; cook 14 minutes or until almost set.
Arrange bacon in a pinwheel formation on top of egg mixture. Top with cheese; place under preheated broiler for 2 minutes or until cheese is bubbly. Remove from heat.
Top with remaining onion, cut into 4 wedges and serve.
